Raspberry with Chocolate Chunks

In the middle of a pandemic year, my options were more limited in terms of who to deliver to. Because of that, I gave some of the recipients the opportunity to choose their flavor and raspberry and chocolate was a suggestion. For fruit flavors, sherbets really allow the fruit flavor to come through so I started with that as the base.
This sherbet was based on the strawberry sherbet by Hello, My Name is Ice Cream but with raspberry puree instead. The chocolate chunks are a standard combination of 90 % chocolate, 10% coconut oil (used to allow the chocolate to melt closer to when it is frozen instead of room temperature), and a dash of salt.
