Ginger Frozen Yogurt
The spicy kick of ginger finds its way to some frozen yogurt.
Ginger has a very distinctive flavor and I found a frozen yogurt recipe based around ginger than I thought looked interesting. With my experiences using ginger with meat, I knew that the ginger would need to be cooked to deactivate an enzyme that would otherwise react with the milk and cause it to curdle (with meat, the enzyme causes the meat to become mushy).

The flavor of the ginger came through and being paired with yogurt made sense - think of all the Indian dishes that often have both ginger and yogurt. However, this frozen yogurt was very hard and almost impossible to scoop neatly. Letting it sit out on the counter for a few minutes to temper helped, but this seems to be consistent with all frozen yogurts I make. Some additional research on how to make scoopable frozen yogurt may be required.
