Cookies and Cream v2
Recreating your favorite chocolate cookies with cream frosting in ice cream form.

Mel wanted a cookies and cream ice cream for some of her friends, so I got to work creating a tasty version of this flavor. I had made a cookies and cream a few months ago but there were a few things I didn't like about that version, so I used this opportunity to make the next generation. This version was well received!

This version had two notable changes - cream cheese ice cream (instead of vanilla) and chopped cookies (instead of crushed). Both of these changes resulted in a better ice cream that evoked memories of everyone's favorite chocolate and cream cookie. The cookies were noticeably firmer and had lots of chocolate flavor, which I appreciated.
This used a classic cream cheese base, which I've perfected over the course of many ice creams. I like the tang and chew that the cream cheese provides. It's always fun to blend ice cream base and this base froths up more so than most other ice creams and I end up with well more than a quart when it finishes churning!

The cookie pieces is effectively chocolate sugar cookie dough. It follows a pretty typical sugar cookie recipe and after a short stint in the fridge to chill, I sliced the cookies and baked them. From there, the cookies were chopped and added to the base.
