Chocolate Covered Strawberry
The perfect ice cream for Valentine's Day.

We were talking about getting some chocolate covered strawberries in honor of the holiday and then I had an idea that we could recreate that in an ice cream flavor! This one did not disappoint and is being given a five-star rating!

This sherbet had three different components to it: the sherbet, chocolate truffles, and dark chocolate fudge sauce. Iām a big fan of the chocolate truffles that we make. Anytime I feel like they will be delicious in an ice cream flavor I suggest that we add them š
To make the sherbet, we started with making a puree from thawing frozen strawberries and putting them in the blender. We then whisked in buttermilk to make the strawberry mixture. Then we boiled milk, cream, sugar, and glucose together. We then chilled the hot mixture and once it was cooled, we mixed in the strawberry mixture. We strained that mixture and then put it in the fridge to cure overnight.






To make the truffles, we started by heating up some cream and corn syrup, then added some chopped bittersweet chocolate. Once the chocolate was melted, rum was added and mixed in. The mixture was then cooled in the freezer and we used a small cookie scoop to portion the truffles. We left the initial mixture to cool in the freezer a little too long before we scooped them. They turned out harder than we intended but they still tasted very good added to the sherbet. That is the only slight negative that I have for this flavor.


To make the dark chocolate fudge sauce, we mixed sugar and milk. Then we sifted in cocoa powder, melted the chocolate and butter, and then whisked in the vanilla for a delicious chocolate sauce!
Once the sherbet base cured overnight, we churned it, and then mixed in the chocolate truffles to make the completed sherbet. When it was time to eat, we heated up the dark chocolate fudge sauce and put it on top of the sherbet. Matt definitely covered his scoop entirely with the fudge sauce to create the effect of a chocolate covered strawberry and I more so drizzled mine on to see the pink color of the sherbet. I feel like I say this about a lot of the flavors that we make, but this newest flavor is definitely on a top flavor list for me! I was pretty proud to come up with the flavor idea and to see the idea of the creation come to life!
