Carrot Cake

Carrot cake is simply delicious with the moist cake filled with little pockets of carrots and cream cheese frosting. This ice cream attempts to recreate the flavor of carrot cake.

Actual carrot cake was blended into the hot base and the final result was strained to remove the little bits of currant that didn't fully blend. It smelled like carrot cake when the base went in for the overnight chill and the color was a nice shade of the cake. If I looked closely, I could see small flecks of carrot in the base. In the end, it does taste like carrot cake!

Cream cheese frosting was more challenging to replicate. In the end, a buttercream frosting was made and thinned out with some cream to keep it softer in the freezer.
